2/27/22: Apparently I sent this photo to the blog 2 1/2 years ago. Looks good! Must be from the Indian Instant Pot cookbook, or maybe some variation on a recipe in there.
Tonight was butter chicken again. The recipe called for saving half the sauce for something else. Last time I left it in the fridge and never used it. This time I poured a can of corn into the leftover sauce. My wife and kids enjoyed this option. Other options apparently are tofu, vegetables, paneer. I like the idea of making something different with the same sauce.
Ground beef coconut curry and spinach, from the Indian Instant Pot cookbook . It came out delicious--rich, spicy, full of veggies. I tried to sell it to the family like an Indian beef luau. My son and wife enjoyed it, but my daughter (who loves beef luau) did not buy this comparison. She ate leftover beef luau from last weekend.
