This is a weekend favorite around here. Chicken was boneless skinless thighs cooked to shredding for 12 minutes in Instant Pot. The enchilada recipe was based on this one from Pioneer Woman.
Ground beef coconut curry and spinach, from the Indian Instant Pot cookbook . It came out delicious--rich, spicy, full of veggies. I tried to sell it to the family like an Indian beef luau. My son and wife enjoyed it, but my daughter (who loves beef luau) did not buy this comparison. She ate leftover beef luau from last weekend.

During our strict phase, we ate a fair amount of Indian food. Now, we don't cook that much of it since it's not a family favorite, but occasionally when I feel the need to eat something different, I can whip out a couple of dishes from things we have lying around.
